One of my favourite things to do is cook and one of my favourite recipes to cook is my brown lentil stew; it is great for a cold winters day. I have just started to get into cooking and I am actually quite good at it. For example the other day I made my own noodles with a sauce that I made myself. A bit later on in this post I will share the Brown Lentil stew recipe with you. Ever since I was little I would watch my mum cook. This is my recipe great for the family and very healthy. 

Brown Lentil Stew

Ingredients: 5 Cups of Water, 4 Cloves of garlic, A teaspoon of Cumin, A teaspoon of Tumeric, A Teaspoon of ginger paste, Diced Garlic, Chopped Mushrooms, One Onion, 400g Tinned Tomato, Green Beans, Brown Lentils, Salt and Pepper.

Melt the coconut oil in a large pot over medium heat and sauté the onions, mushrooms, and green beans until tender, for about 8 minutes.
Add in the minced garlic and sauté for another minute, just until fragrant.
Add in the cumin, ginger, turmeric, salt, lentils, water, and tomatoes and bring the soup to a boil. Once boiling, lower the heat and cover the pot to let everything simmer until the lentils are tender, about 20 minutes.
Leftovers can be stored in the fridge for up to 4 days, and I think this would make a great packed lunch in a thermos for the week, too!
